This time, we have the honor of welcoming two exceptional guest chefs, who will unveil the magic of fermentation and modern Bulgarian gastronomy.
Vladislav Sergeev Penov dedicated himself to the culinary arts in 2006. Over the next nine years, he gained experience in prestigious restaurants in Bulgaria, and in 2015, he moved to Bristol, England, where he joined Brasserie Blanc. After six months, he received an invitation to join the newly opened Cosmos restaurant in Bulgaria. Accepting the challenge, he gradually climbed the ranks, and in 2018, he became the head chef.
Under his leadership, Cosmos has won the prestigious Bacchus “Restaurant of the Year” award three times (2023), and his team secured first place in the “Biorest Cup” culinary competition. In 2024, the restaurant became part of JRE (Jeunes Restaurateurs), one of the most esteemed European culinary organizations, cementing its status as a leading name in gastronomy.
Anton Vihrov Vasev is a pioneer in fermentation in Bulgaria and the founder of SO Ferments, the fermentation brand of Cosmos restaurant. His passion for traditional fermentation techniques, fused with a modern culinary approach, has established him as one of the most intriguing figures in contemporary Bulgarian cuisine.
Through his work, he redefines our understanding of fermentation, creating exceptional products that merge ancient preservation methods with innovative culinary techniques. His expertise and insatiable curiosity have made him a respected authority in the culinary arts in Bulgaria, where he continues to push the boundaries of what’s possible.
